In last names - why is the K in Knipple not silent but in Knapp it is silent?

For a last name, Knipple is pronounced "ka-nip-ple" and knapp is pronounced "nap". If they are both names why is the k silent in one but not the other. How are we to know if the k is silent if we meet someone with a last name starting with Kn...?
